Corn Dog Muffin Recipe
Summer is almost upon us! We are down to 9 days of school left, woohoo! For me that means I get to spend a few months hanging out with the coolest kid ever, my daughter. It also means that the frozen lunches (or skipping lunch all together) won’t cut it. So with that in mind I wanted to think of some fun lunches that we would both love. One of those lunches is my Corn Dog Muffins! It’s everything you love about a corn dog, without the stick (or the frying!). It’s also perfect for little hands, and they taste delicious! Let’s check out how easy they are to make:
Here is how to make my Corn Dog Muffins:
You Will Need:
- Corn Muffin Mix
- Hot Dogs
- Shredded Cheese
- 1/3 cup Milk
- 1 Egg
First, you will mix your corn muffin mix with 1/3 cup of milk and 1 egg. (Or however your package says to mix it) Preheat your oven to 350 degrees.
Then, You will grease a muffin pan and put about a tbsp on muffin mix in each muffin part. Cut your hot dogs into bite sized pieces and place 1 hot dog piece in each part as well.
Next, you will spoon another tbsp on top of each mix and top with a pinch of shredded cheese. Bake at 350 for 15-20 minutes.
Once your muffins are golden brown you can pull them out of the oven. Let them cool and enjoy! What I love about this recipe is that the kids can help (or maybe even do themselves!). I love finding any reason to get my kids in the kitchen with me. Because if they know one thing, they are going to learn how to cook for themselves ha!
